100 g de garbanzos secos

5 cdas. de aceite de coco derretido (u otro)

3 cdas. de sirope de arroz 

2 cdas. de bebida vegetal

20 g de harina integral de avena 

40 g de algarroba (o cacao en polvo) 

1/2 cdta. de levadura en polvo

1/4 cdta. de sal

4 onzas de chocolate negro en trocitos 

Steps

1. El día anterior a la preparación de las galletas deja los garbanzos a remojo en un bol con agua fuera del frigorífico durante 8-12 horas. 

2. Pasado el tiempo de remojo, escurre y lava bien los garbanzos. Pon una cazuela con agua al fuego y en el momento que comience a hervir incorpora los garbanzos. El agua debe ser abundante sobrepasando los garbanzos.

3. Cuece a fuego medio durante 90 minutos, si utilizas olla exprés el tiempo se reduce a 20 minutos.

4. Precalienta el horno a 180°C. En una batidora o procesador añade los garbanzos cocidos, el aceite de coco, el sirope de arroz y la bebida vegetal.

5. Tritura hasta obtener una mezcla homogénea. 

6. Vierte la mezcla en un bol y añade la harina, la algarroba, la levadura y la sal.

7. Mezcla todo bien con una espátula o cuchara. 

8. Por último, añade el chocolate en trocitos a la masa y mezcla hasta que esté bien repartido. 

9. Para formar las galletas coge porciones de masa con una cuchara y haz bolitas del mismo tamaño con tus manos, luego aplástalas y colócalas en una bandeja de horno forrada con papel vegetal.10. Hornea a 180°C durante 20 minutos. Deja enfriar en rejilla antes de probarlas.
