Cava procedente de uvas ecológicas. La personalidad de los cavas de Alta Alella queda reforzada en este cava por la utilización de nuestra variedad más genuina, la Mataró (nombre de la capital de la comarca del Maresme). Tras una maceración en frío durante 10 horas para obtener el color deseado , la uva se prensa ligeramente para obtener el mosto flor, el cual inicia la fermentación a una temperatura controlada de 15ºC en tanques de acero inoxidable. Después de una aplicación estricta del método tradicional y una crianza mínima de 30 meses, sale a la venta recién degollado.

Cava procedente de uvas ecológicas embotellado en botella especial para acentuar el factor diferencial y representado por un coupage muy internacional que lo dota de estructura , aroma y sabor mucho más marcados . La vendimia se realiza manualmente seleccionando las mejores uvas para la elaboración de cava. Extracción muy suave del mosto flor para evitar la obtención de color del Pinot Noir y la fermentación se realiza a 15ºC de forma separada para cada variedad . Con una aplicación estricta del método tradicional de elaboración y con un mínimo de crianza de 30 meses, se pone a la venta recién degollado.
