Category1. Lavamos y remojamos el daikon durante unos 15 minutos. escurrimos y reservamos.
2. Preparamos el condimento. En un bol mezclamos el tamari con el mirin, el concentrado de manzana el caldo en polvo con 3 cucharadas de agua. Reservamos.
3. En un wok o sartén salteamos el daikon con aceite durante unos minutos. añadimos la zanahoria y el calabacín y seguimos cocinando durante unos minutos más.
4. Añadimos el condimento y seguimos cocinando hasta que no se haya evaporado todo el caldo.
5. En una sartén ponemos el mochi y lo tostamos ligeramente, le damos la vuelta y cocinamos un par de minutos más, volvemos a darle la vuelta y cocinamos hasta que cada lado se tueste un poco y el mochi se ablande.
6. Bañamos el mochi con un poco de salsa de soja y lo servimos en un plato junto con la verdura salteada.
