10g de sal

100 g de masa madre con levadura para pan y pizza

100 g de harina integral de centeno

400 g de harina de fuerza

325ml de agua tibia

1 cucharada de aceite de oliva

1 cucharada de semillas de amapola

1 cucharada de semillas de sésamo

1 cucharada de chía 

Steps

1. Mezclar la levadura y la mitad del agua templada.

2. Añadir la harina de fuerza, la harina de centeno y la otra mitad del agua. Mezclar bien y añadir las semillas.

3. Amasar hasta que quede una mezcla pegajosa y dejar reposar tapada durante 12 horas en un sitio cálido hasta que doble su volumen.

4. Enharinar la superficie y las manos y amasar durante unos 15 minutos hasta que adquiera elasticidad.

5. Separar la masa y formar dos panes. Los volveremos a tapar durante 1 hora más para que crezcan.

6. Precalentar el horno a 250ºC y añadir un recipiente apto para horno con 250ml de agua durante 15 minutos. Una vez el horno tenga vapor, bajar la temperatura a 200ºC y hornear el pan durante 45 minutos. Sabremos que está hecho si al darle unos golpecitos al pan parece que esté hueco.
