Category1. Precalentar el horno por arriba y por abajo a 180º, mientras se prepara el bizcocho.
2. Mezclar en un bol todos los ingredientes húmedos (yogur de soja, bebida de avena, sirope de arroz y aceite) y remover bien.
3. Incorporar al bol la harina tamizada con un colador de malla fina, la levadura, la ralladura de limón, la sal y el cacao en polvo. Remover bien hasta obtener una masa homogénea.
4. Verter la masa en un molde para horno. Si no es de silicona, lo mejor será untarlo con aceite y/o cubrir con un papel vegetal de horno. Dar unos golpecitos al molde con el fin de repartir bien la masa.
5. Introducir en el horno a media altura y hornear durante unos 40 a 45 minutos.6. Retirar del horno y dejar enfriar unos 5 minutos antes de desmoldar.
7. Retirar del molde y colocar sobre una rejilla para que se enfríe con mayor facilidad y no acumule humedad en la base.
8. Cuando el bizcocho ya esté completamente frío, cortar por la mitad en sentido transversal y untar generosamente con compota de frambuesas.
9. Juntar las dos partes apretando suavemente.
10. Diluir la crema de avellanas y cacao con un poco de bebida de avena, de manera que quede una crema que sea fácil de extender por la parte superior del bizcocho con la ayuda de una cuchara.
11. Decorar el pastel con los frutos rojos y unas hojitas de menta fresca.
