For the base

60 g de galletas de la mañana

30 g de aceite de coco derretido

Relleno

80 g (peso escurrido) de tofu

 80 g de leche de coco

100 ml de bebida de avena o de arroz

4 cdas. de sirope de arroz

Ralladura y zumo de 1 limón

1 g de agar agar en polvo

¼ cdta. de cúrcuma en polvo (opcional para dar color)

Para decorar

Coco rallado 

Fresas cortadas en trozos

Steps

1. Tritura las galletas con un procesador o picadora hasta que sean como una harina. Añade el aceite de coco derretido previamente en el microondas y vuelve a triturar hasta que esté todo integrado.

2. Pon un par de cucharadas de la mezcla en cada molde de silicona y presiona con una cuchara para formar la base de las tartaletas. Mételas en la nevera mientras preparas el relleno. Puedes utilizar un molde diferente.

3. En un vaso pon el tofu cortado en trozos, la leche de coco y la bebida vegetal. Tritura con una batidora hasta que obtener una mezcla homogénea y cremosa.

4. Vierte la mezcla en un cazo y añade el sirope de arroz, la ralladura de limón, su zumo, el agar agar y la cúrcuma. Mezcla bien y en cuanto rompa a hervir déjalo cocer un par de minutos para que el agar agar haga efecto.

5. Retira del fuego, deja templar un poco y llena las tartaletas con esta mezcla. Deja enfriar en la nevera durante al menos 2 horas.

6. Antes de servir decora cada tartaleta con coco rallado y un trozo de fresa.
