Courgette zoodles with tofu in satay sauce

 2 calabacines

1 bloque de tofu

1 cebollita tierna

1 cm de raíz de jengibre

2 c.s. sirope de arroz

1 guindilla

½ c. de curry 

Zumo de ½ lima

100 g crema de cacahuete 

½ taza de crema de coco 

1 c.s. de tamari

Aceite de sésamo

Steps

1.Con un espiralizador rallar el calabacín en forma de noodles y reservar.

2.Cortamos el tofu en daditos, lo maceramos con aceite y tamari, lo disponemos en una bandeja de horno y cocinamos a 200 grados durante 10 minutos. También lo podemos freír en una sartén.

3.Preparamos la salsa satay. Picamos finamente la cebolla, el ajo y la guindilla, y salteamos en una sartén con el aceite, el curry y el jengibre rallado. Removemos y añadimos el sirope, el tamari y la crema de cacahuete. Cocinamos hasta que se caramelice. Añadimos el zumo de limón y la crema de coco y dejamos reducir.

4.Montamos el plato. Incorporamos a la salsa los noodles de calabacín, los salteamos un minuto, removiendo y servimos con los daditos de tofu.
